Grain-Free N’Oatmeal Cookies

Processed with VSCOcam with s2 presetSometimes, when you have a sweet tooth and you don’t have time to run out for ingredients for a recipe, something magical can happen! Here’s a brand new original recipe for these delicious grain, dairy and refined sugar-free cookies that taste so much like an oatmeal raisin cookie, you truly wouldn’t guess that there are absolutely no grains involved! These are all SCD-approved ingredients and are so deliciously moist and chewy!Processed with VSCOcam with s2 preset

WHAT YOU’LL NEED:

2-1/2 cups almond meal
1/2 cups raisins
1/2 cup coarsely chopped cashews
1/4 cup melted butter
1/2 cup honey
1 egg
1/2 tsp. baking soda
1/8 teaspoon salt
1/4 tsp pumpkin pie spice
1/2 tsp vanilla

 

Preheat your oven to 325. Mix all the ingredients together in a large mixing bowl. Drop and press heaping tablespoon-sized dough on a greased cookie sheet. This dough is sticky, so it’s not going to press easily into a perfect little cookie, but that’s ok! Bake for 12-15 minutes, or until golden brown and remove, cool, and enjoy!Processed with VSCOcam with s2 preset
